L'Oven est le premier restaurant situé au coeur du centre-ville de Lincoln, crée en 1988 et appartenant et géré par une famille de cuisiniers qui préparent une cuisine indienne depuis plus de 27 ans. Il est spécialisé dans la cuisine du nord de l'Inde, connue pour ses couleurs riches, ses profils de saveur et son style unique de cuisson dans un four d'argile, appelé le Tandoor. Le poulet, les crevettes et l'agneau marinent pendant plusieurs heures dans un mélange de yaourt et d'épices puis sont placés sur des brochettes tandis que divers pains frais sont faits à la main quotidiennement par les chefs. Les brochettes et les pains sont ensuite placés dans le tandoor sur une flamme nue où ils sont cuits à la perfection et les saveurs riches sont scellées pour assurer la tendresse et la qualité de la viande. The Oven Restaurants specialize in Northern Indian Cuisine which is known for its rich colors, flavor profiles and a unique style of cooking in a clay oven, called the Tandoor. Chicken, shrimp and lamb marinate for several hours in a yogurt and spice mixture and placed on skewers while various breads are being hand made by our chefs fresh each day. The skewers and breads are then placed in the tandoor over an open flame where breads are cooked to perfection and the rich flavors are sealed in to ensure tenderness and quality of the meat.
