Le St. John est la maison d'origine de Fergus Henderson, auteur de «Tout manger, du museau à la queue ". Il a ouvert ses portes en 1994 dans un ancien fumoir, à l'angle de Smithfield Market.
En célébrant les meilleurs produits britanniques du pays et en tirant le meilleur parti des meilleurs produits de saison, tout en maîtrisant les techniques de cuisson, le St. John est devenu l'un des 50 meilleurs restaurants au monde et a reçu sa première étoile Michelin en 2009.
Tout manger du museau à la queue signifie que, le cas échéant, toutes les parties de l'animal doivent être utilisées dans la cuisine. Ainsi aux côtés d'un rôti de boeuf et d'une limande sole, vous seront aussi proposés de la rate de porc, des rognons et du cœur de bœuf, du foie et des tripes ainsi qu'une salade de persil et d'os à moelle, véritable plat signature.
Bien que souvent déconseillé aux végétariens, ce restaurant saura leur préparer des plats adaptés à base de bons produits, avec le même soin que celui apporté à la viande, au poisson, aux volailles et aux desserts.

Having spent years supplying London’s top restaurants through their separate wine businesses, Joe Haynes and Benedict Butterworth have joined forces with Tom Hurst, who has worked at Brawn, The Marksman, Levan, and most recently as Head Chef at Lasdun, to launch the trio’s first restaurant together.Located in a Grade II listed building on Cloth Fair, Cloth Restaurant is part of a historic row of buildings in the City of London that survived the Great Fire of 1666. Down this atmospheric alley opposite St Bartholomew church, Cloth is taking over a double fronted corner site that’s beneath the former home of poet John Betjeman and next door to the two oldest residential buildings in London. Inside, low ceilings, wood floorboards with antique wall lights and artwork create a cosy, intimate atmosphere, while marble tables, long dark wood banquettes, antique crockery and cutlery will create the feel of a classic bistro.
