We learned how to hand knead artisanal flour and make 4 types of hand-pressed and 4 types of filled pasta while learning the history/background for each. They showed us the machines they use to make their extruded pasta and freely answered all our questions. Beverages and fresh rosemary shortbread were available throughout the 3.5 hour class. After we finished making our pasta we got to observe them being prepared into the dishes we dined on afterward. Our teachers were very knowledgeable and helpful.
