Le Café D'Alsace est présenté par le chef Philippe Roussel, précédemment au Chelsea Bar and Bistro et au Montparnasse. Celui-ci est originaire de Bretagne mais connaît quelques petites choses à propos de l'Alsace, servant des plats typiques comme la tarte flambée (avec des oignons et du lard grillé), la potée (soupe aux choux) et la choucroute garnie de porc ou de fruits de mer.
