He also suggested the winter Negroni drink and it was fantastic! We started with the salted beets and the hiromasa crudo both were fresh and light. We had the skate cheeks, the texture of the fish was flaky and had a bit of crunch on top. The ricotta dumplings had my mouth watering from the smell as I broke open the first dumpling. It had the perfect amount of heat and a slight smokiness that was so freaking good you want to lick the bowl. Hubby ordered the veal osso buco and raved about it. I had the orata and it was flaky and delicious. Most places that excel at the main food are not so terrific with desserts but at Bastia both the panna cota and the basque cheesecake had unique flavors that were a perfect ending. Service was incredible and allowed us to have conversation but never missed a beat on clearing and presenting the next course. We’ve been to a lot of really good restaurants but Bastia is top 3 of them all. Our cocktails, a Tiki Taka and Espresso Martini were beautifully executed. My Tiki Taka was easily the best cocktail I've ever had (indeed, good to the last drop). For dinner, we shared the calamari and a Margherita pizza. The calamari was super fresh and flawlessly prepared; we are regularly disappointed by chewy, rubber band-like calamari. Very much enjoyed the fennel-based sauce, which was a welcome change from the typical single-note red gravy. We have resolved to make The Cage our sole source for calamari when we have a craving. The pizza was sublime; a gorgeous "fluffy" and crispy edged crust juxtaposed with a very thin base that underlaid the rich, fragrant tomato sauce, fresh basil and mozzarella. Pizza perfection!!! Easily the best thin crust pizza around. The Cage's interior is thoughtfully designed and hosts a gracious bar. You definitely feel like you have been transported to the City. We adored the "green" walls and the chandeliers housed in birdcages. Service was outstanding, including our lovely "server-in-training." She was extraordinarily attentive and kind. We also had the honor of meeting the owner, his brother, and the GM, all of whom were gracious and charming. So thrilled were we with our visit that we made our next reservation while we were mid-meal. Well done for a soft opening.
