Before the James Beard Award and the Gourmet Magazine review, Lotus of Siam was a small little hole in the wall located in Commercial Center in Las Vegas. November 1999 was the month Chef Saipin and her husband Bill took over Lotus of Siam. Since then, Thai food became an adventure for those willing to step out of their comfort zones for Asian Cuisine. Chef Saipin’s distinct cooking has been passed down from generation to generation, from both her grandmothers and her husband’s grandmothers. Her northern style cooking has opened America into the “Northern” world of Thailand, away from the Bangkok style of sweet and tang. The northern menu consists of hearty herbs and spices, along with Thai style stews and coconut-less curries.     Nittaya’s is our go to place for Asian and Thai in the Summerlin area. It’s is consistently excellent and service is outstanding. We had a reservation for 7:30 on 12/28 and arrived a bit early. We were seated immediately and offered waters right away. Service is fast. We ordered the red sangria and a Chardonnay as beverages that came promptly and were delicious. We are regulars - so ordered our favs tonight because we were starving. Dumplings , Phuket poppers and edamame. Followed by chicken pad Thai at level 4 spice. I asked for additional chili spice on the side and I added to the pad Thai for a most amazing taste and chili kick. I would not recommend that unless you are a spice fiend like myself… eye watering and runny nose at its very finest!!!!! Fabulous!!!!
