How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

    Wish Echo and Rig would invest in aesthetics and decor. The place is drab with its dull cream walls, no frames or other forms of decor. It really makes it look like a dormitory cafeteria or a monastery. They should let a restaurant designer come in and provide ideas. Food is good, steaks well dried and in the right texture that one wishes. One cannot complain about the food. Went there to celebrate a birthday. After paying the bill and as we are about to go, they serve the complimentary dessert. Very anti climactic

    Amazing food and service. It’s like if you went to a high end steakhouse owned by family. Will come back every time we visit Las Vegas.

    We were greeted by one of the managers right after we were seated. Food came out fast and was delicious. I’ve eaten at many steakhouses and this is on top of my list. Also the prices are crazy good.

    Had a grand time with Y and L. We were able to try many of the small plates which we shared. The portabello fries with herb aiolli and fried Castelvatrano olives ranked the highest. (Side note. By far the best portabello fries I've ever come across). Other dishes tried and in no order of likeability: burnt pork belly ends, carne asada bone marrow, roasted brocollini, mac n' cheese, and tomato/watermelon/red onion salad. So glad the visit was with friends of an adventurous spirit. Entres. Y had the short rib grilled cheese. ( Didn't try it, wasn't in a sandwichy mood. Loved the crunch of the rustic bread when she bit into it though.) L and I both had the ribeye cap. OMG. What a killer steak. Honestly? Very rare that I order beef. Even rarer for me to be impressed. The char on the steak, the tenderness, the taste, and yes, even the size (just right, I wasn't slammed with an outrageous hunk of meat.) Dessert: We each got something different and swore our own choice was the best of the three. Buttermilk Panna Cotta with drunken berries, Hot Chocolate Cake, and Apple Pithvier w/a scoop of vanilla ice cream. Beth, our server was amazing. Personable and knowledgeable. Able to talk about the food from a genuine sense that she had really eaten it before, not just lip service. Ambiance was pleasant. Music wasn't overwhelmingly loud. We were able to converse without yelling at each other. Oh, and not so dark you couldn't see around you. Will we come back? You betcha! Too many items on the menu I want to try. A great dining experience.

    Echo & Rig is our favorite place to go for a great steak. The food is always excellent, and the staff members make us feel like royalty. Javier (manager) remembers us and our preferences, and Lou (waiter) takes great care of us. We can't say enough good things about Echo & Rig!

    My steak delicious. My birthday and chose Echo and Rig. Just really good food and very nice service. Valet parking convenient. Prices are decent.
