How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting? That was the question that acclaimed chef and restaurateur Sam Marvin (creator of the much-celebrated Los Angeles restaurant Bottega Louie) posed when he decided the time was right to reinvent what has long been the trademarks of the steakhouse genre – masculine vibe, dark rooms, fancy waiters, slabs of oversized beef and overly expensive pricing. The answer became Echo & Rig Butcher and Steakhouse, located at the charming Tivoli Village just off of Summerlin Parkway; 15 minutes from the famed Las Vegas Strip.

    Was one of our "go to" weekly spots until a we had an issue a while back. Tried it again and we're very impressed with the menu and the service. Lots of great small dishes to sample. We will be going back frequently as we work our way through all the great items to taste!

    Server seemed too busy at the time. Tough to get his attention and was rushed all night. Super nice guy though, and we had a great experience.

    Service for being an early reservation and empty was slow. Waited for bar drinks long time. Food was served good but steak was medium rare bleeding my plate not medium. Then when you ah e to send back they busy takes time and everyone else done eating. Food had good value to other steakhouse’s. Surprise to see dry aged you can only buy but not opportunity on menu. Bring steak choices on a tray vacuum sealed not very pleasing but maybe do so they keep if not purchased. Just not usually seen in a steakhouse.

    We’ve been eating here for years and honestly the last handful of times we’ve been in the food has been lacklustre, to say the least. Last night my salad was gritty (?), the crab cake was boring and is (and has been) plated in a super boring way. The only good dish was the broccolini and even that was a majority of stems. My partner’s swordfish was cooked well but massively over salted. It really seems like the kitchen phoned it in, which is sad because I really like this place and I always appreciated how thoughtful the food was. I will also point out that our drinks are always good. I’m a big ‘hot mess’ drinker and it’s always dangerously delicious. No qualms there. Service is generally good, just the food is getting lazy, so probably won’t be dining here anymore.

    It’s been a while since I’ve been to E&R. The food quality was amazing. Lucas, our perky and wonderful server, was wonderful - attentive, friendly and very knowledgeable. I will definitely go back and try some brunch or lunch next time

    The service was okay, order takers not salesman or very engaging. One staff, seemed to pretend not to speak much English almost to avoid conversation. The ambiance was bland and almost like an office bathroom, no decorations or really any sense of decor, just bland and minimalist like a serial killers house. Food was seasoned well, but the meat was undercooked, and we like rare but ordered Medium Rare. Mac and sides were warm not hot like they prepped those and then sat under the heat lamp till the steaks were done. Price was okay but the cuts of meat even what they claim were tender, were not tender at all.

    Incredible spot. Food and service is all time, the beef burger is a hidden gem on the menu as well as the beef tartar. Don’t sleep on the raw meat, incredible pairing and taste. Also service is exceptional, the manager consistently rounds the restaurant and makes you feel more than a celebrity. Would recommend.
