Ernest's Dining Room at NAIT has been aptly described as the "jewel in the crown" of Hokanson Centre for Culinary Arts in the School of Skilled Trades. Ernest's decor is described as "understated elegance". Tasteful compliments of cherry wood and brass highlights, a beautiful rock feature wall, muted lighting and attention to detail provide the room with a distinct corporate ambience. Critically acclaimed and numerous accolades identify the "haute cuisine" prepared by second year Culinary Arts diploma students as "outstanding". OpenTable diners voted Ernest's top 100 in Canada for two consecutive years. Seasoned chef instructors emphasize the importance of using high quality local regional products. Mastery of traditional cookery combined with contemporary artistry has resulted in a truly electric cuisine. Elegant service is provided by eager Culinary and Hospitality students. An emphasis on etiquette and authenticity is encouraged through the guidance of professional mentors.

Celebrated daughter-in-law s birthday and all our meals were terrific! A bit disappointed that the soup of the day….potato/ mushroom was no longer available by the time we ordered.

Absolutely fantastic experience overall. Service was also amazing. The students did a phenomenal job overall. You get started off with a small random appetizer as a creation from one of the students - we had a tuna tataki and it was anctually one of our favourite parts of the meal. The bread/pastry starters were probably the best bread we’ve ever had at a restaurant - warm, flavourful, flaky, delicious, with fresh butter on the side. Mains were tasty, felt like a fusion with influences taken from multiple cuisines. Pasta noodles almost felt like an in between of Italian and Chinese noodles. The game hens were tender and juicy. Only comment is the herb flavours were a little on the heavy side. Dessert profiteroles and chocolates were 10/10 - highly recommend. Fresh cream, warm profiterole, and overall delicious. I love the fact that the students really do seem to put their all into preparing the meals, and that they genuinely care about the quality and outcome. The menu is small, but I believe it’s a rotating menu. Having some different options every visit is a big plus in my opinion.

I went to Ernest’s with my mom to celebrate her birthday. They had a little card waiting for her on our table when we arrived, wishing her a happy birthday. She was so pleased; it was a very thoughtful touch. The menu is fairly small, but has a little bit of everything to choose from, including several meat options, vegan, vegetarian, gluten free etc. and they are willing to accommodate other dietary requirements. I also noted there were a lot of Canadian ingredients, which I appreciated seeing. They notified us that they had an ‘Eat, Learn, Celebrate’ special in which we could get any appetizer, entree and desert for $32. It was a fantastic deal. They also gave us a free selection of freshly baked breads and butter to start. The food was incredible. Prepared with a skillful touch and cooked to perfection. Cocktails were also delicious. When our dessert arrived, they wrote ‘Happy Birthday’ on mom’s plate in dark chocolate. She was thrilled, and I was very grateful for all the little details they provided to help make her feel special on her big day. I’d absolutely come back and recommend it to anyone. The quality of the food and service, especially when compared to the price, is fantastic. 10/10
