They are too chewy and don't compliment the dish. Highly recommend this place with one exception. I am making this public in an attempt to get the Management to get rid of the punishment seating in the back of the restaurant. When we arrived there were plenty of seats in the front of the restaurant that had comfortable chairs. Yet, they attempted to seat us in a chair that is not even suitable for a prison. They are metal, cold, extremely uncomfortable and need to go. They were very accommodating when we requested to move, but why they would risk a bad review when they was no need to put anyone there other than to fill someone's station. The prime rib was gorgeous, as were the mashed potatoes and brussels sprouts. The yorkshire pudding was -- unfortunately -- an overcooked and brittle shell. A misstep that didn't ruin the meal by any means, but it's not something that's often offered on American menus and I'd been looking forward to it as a component. We shared their charcuterie board which was excellent. I asked for a particular wine which they didn’t have, but the server was knowledgeable and suggested an equal substitute. For main entree, I had Dover Sole. Nice presentation and although a little lemony, it was still delicious. You can go anywhere and get a good meal once, to come back again and again and see the established high quality standard that has been set in both the front and back of house is really refreshing. Since moving to Las Vegas about 15 months ago, my wife and I make a point to go here at least once a month. Their seasonal menu turns over every few months with a few staples never leaving. Their “Royale with cheese” is a top 5 burger in Las Vegas - period, the spicy garlic shrimp and their seasonal pasta dishes cannot be skipped.
