But he literally had a blind spot on his rounds, he didn't look at us once. We had to wave him down to get his attention, which is odd at a more upscale place. We know most of the waitstaff here, and got more attention from them stopping by to check on us, than our waiter. Anyway, we still love this place, and highly recommend it. May have just been an off day for us, it happens. Had the shrimp app, taste was on point, but shrimp was so over cooked it was dry, not just rubbery. Everything else was fantastic as usual. The buratta app, the filet, the skirt steak, bomb. They had clam chowder as the soup, and it was delicious, lots of clams and potatoes, thick and creamy, delicious! we had the Rose Park old-fashioned, and a lemon drop with Chopin, so good, but we missed Ion, it was his day off, which bummed me out because it was my husband's birthday, and I know he would've made a big deal of it. He always makes us feel special. Our waiter had to be reminded it was his birthday. Kind of a bummer. Still better than 90% of the restaurants in town even on an off day! The Hummingbird cocktail was a showstopper, with shaved cotton candy adding a fun sweet twist, while the Old Fashioned was expertly crafted and perfectly balanced. For our mains, the Wagyu steaks were cooked to absolute perfection—medium rare, tender, and packed with flavor. The truffle butter on the side was a perfect complement. Our sides of Brussels sprouts were a tasty surprise with candied bacon bits, crispy and full of taste, while the truffle fries were the perfect balance of rich and savory. We finished with the Butter Cake dessert, which was rich and decadent, the perfect end to a flawless meal. Absolutely fantastic dining experience at the Eldo Chop House!
