Thomas Makris, de l'île de Skopelos, est tombé amoureux lorsqu'il a rencontré Helen Babalos. Ils se sont rencontrés au Orestes Greek restaurant en 1974, lors d'une tournée de danse grecque en Amérique du Nord. Peu de temps après leur mariage, ils ont eu une vision d'ouvrir un lieu hors du commun à Vancouver; un restaurant grec où tout le monde fait partie de la famille; où tout le monde fait l'expérience d'une délicieuse cuisine maison et d'un service impeccable. En 1984, ils ont ouvert Anatoli Souvlaki dans le nord de Vancouver.
