So you ask why Wanda Byob? Wanda Pollyana Boos/Lipot was my Mother and my inspiration to become a Chef. Wanda was an amazing cook who actually had some serious training in her country of Trinidad and Tobago. In fact, one of my most prized mementos is my mother's... her cooking manual from Naparima Girls High School in Trinidad. What started as my mother's inspiration many years ago has turned into a career that I love and am very proud of. So here I am, my mother's son, who has spent 38 years in the kitchen, perfecting my craft. I now want to share what I've learned with all of you in a place I can call my own.With the help of my wonderfully supportive wife, Gilda and my wonderful family behind me, I look forward to what's to come. Depuis plus de 15 ans la propriétaire du Yokohama, Cindy Chan-Sze, est fière de proposer sa cuisine asiatique de qualité aux palais de Burlington County et a tissé des liens étroits avec la cuisine et la population du South Jersey. Son fils Kenneth Sze, désormais co-propriétaire, a aussi apporté son inspiration et sa vision créative de la cuisine japonaise au Yokohama. En apportant tout son soutien et sa vision à chacun des restaurants de sa maman, Kenneth a joué un rôle prépondérant dans tous les succès de Cindy grâce à un dévouement total pour la cuisine qui a permis d'apporter une touche unique sur toutes les tables du Yokohama. This coupled with the warm earth tones & natural lighting from the oversized windows makes dining here a truly special experience. Outdoor café dinning when weather permits adds to the romantic ambience.As you are escorted to your table you can’t help but notice the beautifully crafted temperature controlled oak wine cabinet which houses up to 200 bottles of wine. Since the restaurant is a BYOB, the owners wanted to provide customers with a place to store their favorite wines so they are readily available each time they visit. Mawn is a noodle house with “no rules,” and the first restaurant for Chef Phila Lorn and his wife Rachel, who bring with them close to 20 years of experience in Philly’s restaurant scene. Phila, pronounced “Pee La,” broken English for Philadelphia, is a first-generation Cambodian-American chef. The first in his family to be born here, his parents and siblings came to Philadelphia as refugees in 1985 after surviving the war in Cambodia.Mawn, which means “chicken” in Khmer, the Cambodian language, represents more than one thing. To Phila, chicken was at every meal growing up, and to his parents, chicken represented peacetime. During the war and genocide of the Cambodian people, there was mostly only what was found in nature to eat, including rice and salt. If there was chicken, it meant no war. At the end of that dark time, recipes were lost, and culture was wiped out, but through survival, a new authenticity was born.
