Visit us on Ribbon Ridge, where we have something for everyone!At Trisaetum Winery, we specialize in Pinot Noir, Riesling, Chardonnay and Sparkling Wines. Daily, we offer a selection of flights, each with five wines you can enjoy in our art gallery tasting room or out on our covered patio. The tasting fee is $45-50 per person and fees are waived with a minimum purchase.We are also home to Brixeur Spirits, which was started by the team at Trisaetum in 2020. Mushrooms are the heart of what we do at the Joel Palmer House. We have always endeavored to obtain seasonal and local ingredients and we use many locally produced greens, herbs, and vegetables, some of which come from our own culinary garden. We are frequently inspired by ingredients found in the cuisines of France, China, Thailand, Poland and India, so we call our cooking "freestyle." Our dishes pair well the celebrated wines of Oregon, especially Pinot Noir, Pinot Gris and Chardonnay. Our extensive, Oregon-focused wine list has been awarded the Best of Award of Excellence from Wine Spectator. Of special note, The Joel Palmer House ranks as one of Oregon's finest historic homes and is on the National Register of Historic Places and the Oregon Historic Register. Built in 1857, the house is Dayton's oldest standing structure. When weather permits, guests can enjoy their dinner on our outdoor patio, soaking in the last rays of sunshine in the heart of Oregon Wine Country.

    If you want a REAL FRENCH restaurant without flying to France, drive to Carleton OR and go to Cuvée. My wife is from France and I am now also have my French citizenship. Our friend asked us if this was typical of a good French restaurant. Definitely! Except the tables are much less cramped. Everything is made in house and the chef is the owner and he also waits on tables with the help of another man. We have been 3 or 4 times and when we visit the area, it is always a MUST DO. If you want a true example of excellent French cooking—YES, every bit as good as my mother-in-law’s—go to Cuvée!!!!!
