Though it does seem like a little more care could be taken to make a balanced vegan version of certain dishes. The cholula was excellent as was the sea bass with mole. However, the most notable thing about Sazon after the food is the staff. They are trained in the continental style. Totally attentive, coordinated service and very supportive of each other. Highly recommend Sazon for anyone visiting Santa Fe.
