Lorsque le propriétaire Johnny Carrabba a créé le Grace, son nouveau restaurant, il savait que celui-ci commémorerait les souvenirs qu'il avait de sa chère grand-mère Grace Mandola. Grace, également connue dans la famille sous le nom de Mama, était une sicilienne née de parents immigrés en Louisiane. Elle avait un talent pour la cuisine, l'hospitalité et une foi profonde.
