Le menu japonais contemporain du restaurant Morimoto insuffle aux plats traditionnels des saveurs et des techniques de préparation occidentales. On sélectionne des produits de saison pour les préparations de poisson cru et on met en vedette les fruits de mer disponibles ainsi que les fruits cultivés localement et des légumes d'agriculteurs qui entretiennent des cultures durables. Morimoto signe des mets tels que le "Toro Tartare", présenté sur un plateau en bois peu profond avec des condiments tels la crème fraîche, le wasabi, l'avocat, pâte de nori, la ciboulette, le riz croustillant, et le dashi-soja.
