Le chef du Santaella a transformé ce qui était son atelier de restauration en un espace salué pour son architecture pour vous y proposer un menu plein de saveurs, faisant appel à une multitude d'ingrédients frais et locaux en provenance d'un marché fermier situé à seulement quelques pas. Ce lieu vous raconte une longue et passionnante histoire dont les tons vert, brun et boisés sont le décor. Un jardin intérieur peuplé de plantes et d'arbres indigènes, comme le papayer et les bananiers ornementaux, sert de point focal à la salle à manger principale.
