Au cœur même de la Joel Palmer House est le champignon. La maison cherche à utiliser des ingrédients saisonniers et locaux, y compris de nombreux laitues, herbes et légumes locaux dont certains viennent du jardin culinaire particulier du restaurant. La cuisine « libre » du restaurant prend souvent son inspiration des ingrédients utilisées dans la cuisine de la France, de la Chine, de la Thaïlande, de la Pologne et de l'Inde. Les célèbres vins d'Oregon, surtout le Pinot Noir, le Pinot Gris et le Chardonnay, se marient parfaitement aux plats.
