Pour créer le ChoLon Bistro, le chef Lon Symensma a largement puisé son inspiration dans le marché de ChoLon, le plus grand marché aux influences chinoises de Hô-Chi-Minh-Ville. Ce restaurant met en valeur sa passion pour les ingrédients asiatiques et les techniques culinaires françaises dans un espace à la beauté stupéfiante.
