Pour créer le ChoLon Bistro, le chef Lon Symensma a largement puisé son inspiration dans le marché de ChoLon, le plus grand marché aux influences chinoises de Hô-Chi-Minh-Ville. Ce restaurant met en valeur sa passion pour les ingrédients asiatiques et les techniques culinaires françaises dans un espace à la beauté stupéfiante. Le ChoLon sert le dîner et le souper, ainsi qu'un petit menu de collations disponible tout au long de la journée. Le menu se compose notamment de plats asiatiques traditionnels revisités. « La plupart de mes plats s'éloignent légèrement de la cuisine asiatique traditionnelle, explique Symensma.
