Likewise the chole batura: not greasy nor acrid as often can be the case. Uppatam was well received too. The date pancake was enjoyed as was the riff on ras malai. The latter deconstructed and remade as a cake like sponge imbued with ras malai sauce, topped with a crunchy crumble. A novel twist that was a pleasure.
