We are a small, family run restaurant since 2002 specialising in carefully sourced Aberdeen Angus beef from Scottish small highland farms, cooked simply but with flair and attention to detail.Our emphasis is on high quality local ingredients and fresh produce from the best of local suppliers. Beef is selected, prepared and hung for us by Award wining "John Gilmour" of Macmerry master butchers since 1946. Fresh fish are delivered daily by Calum Sinclair and J.K Thompsons. West coast Mussels are delivered fresh daily by "Sea Mcgee". Our venison comes from wild Perthshire deer, lamb from the Scottish Borders. Artisan and farmhouse British cheeses are supplied by renowned Edinburgh cheesemonger, Iain Mellis and dairy produce from Fife Creamery. We take pride to cook everything fresh in our own kitchen daily. We have outside seating arrangements for walk-Ins only.

Back after more than a two year closure following the George IV Bridge in late 2021, Merchants has undergone a full refurbishment. Merchants serves Scottish cuisine in one of the most bustling areas of Edinburgh. Braised shin of beef, haggis and seared seabass are some of the dishes on an ever-changing menu, and the restaurant is happy to try and cater for any specific dietary requirements.
