The Pink Adobe restaurant stands proudly in the heart of Santa Fe's historic Barrio De Analco neighborhood, which is considered the oldest neighborhood in the US. Founded in 1944 by Rosalea Murphy, an artist and social connector, the restaurant takes its name from the rose-colored adobe plastering on the nearly 400-year-old hacienda that serves as its home. This iconic Santa Fe destination at the heart of ​the Old Santa Fe Trail has been known for its ​fun, vibrant atmosphere and outstanding cuisine. La Plazuela était le patio original de l’hôtel des années 1920 et il conserve ce charme ensoleillé du vieux monde. Les lucarnes inondent la salle à manger avec une lumière naturelle et mettent en valeur le mobilier, l’éclairage artisanal et les fenêtres peintes à la main créent une belle salle accueillante pour se regrouper, pour souper et pour créer des souvenirs éternels. Originaire de Mexico, le chef Fernando Olea, ancien chef de l'Epazote, n'en finit pas de fasciner les convives à Santa Fe depuis 1991. Le chef Olea crée des saveurs sophistiquées mettant à l'honneur les traditions culinaires et autochtones du vieux Mexique et des ingrédients cosmopolites. Son menu volontairement restreint propose avant tout des viandes ainsi que des produits locaux frais. Rien n'évoque plus le mystère de la cuisine mexicaine que le mole, sauce complexe comprenant des épices grillées et concassées ainsi que des graines, des noix, du chili et du chocolat. De nombreuses recettes élaborées à partir de cette sauce comportent plus de 30 ingrédients. Certaines recettes comprennent même 5 variétés de chili. Le chef Olea se réjouit de partager ses moles y compris le "nouveau mole mexicain", créé en 2009 pour commémorer le 400ème anniversaire de Santa Fe en 2009. La grande peinture murale de la salle à manger principale a été peinte et présentée au Chef Olea par Federico Leon De La Vega, célèbre artiste de Mexico.
