Chef Diego Moya puise dans ses expériences américaines, françaises, chiliennes, pour créer une cuisine de saison. Il met en avant le légume, privilégie les circuits courts et collaborent avec des fermiers travaillant dans le respect de l'environnement. Le menu est constitué d'un large choix d'entrées et de plats pouvant être partagés, permettant de découvrir sa cuisine de multiples façons. De vins de terroir produits par des vignerons et vigneronnes, des brasseurs, des distillateurs défendant l'agriculture biologique, biodynamique, naturelle. Tel est le credo des 3000 références de la carte. La sélection est faite par Arnaud Tronche et Pascaline Lepeltier MS, MOF.
