The butter definitely had a heavy taste of cinnamon, this would normally be light to ensure you aren’t over powered. Salmon was slimy the texture was off putting and the salmon didn’t really taste smoked, this is usually down to poor quality smoked salmon. The Ravioli was undercooked and the shell was solid and not edible, butternut squash tasted ok. Elk stripping was ok, I like rare but not cold. The time between courses was way too long. 3 hours for 4 courses was excessive, we skipped desert. Becky our host made up for most of the disappointment- she was helpful, cheerful and ensured our drinks were filled. Other staff also came over to make sure we are ok. We were just sitting there enjoying the view so they were very observant. One can only enjoy this level of service at top quality hotels like the Fairmont. The food was great and definitely better compared to a few years back when we were here - if you love seafood, the chowder and seafood pasta won’t disappoint. Because today is Christmas Eve, they have a small choir singing Christmas carols. Overall, the service, view and food are great.
