Chef/director Cherry Truluck draws inspiration from seasonal local produce, historic recipes and contemporary international cooking.Custom serves a brunch menu from 10am-5pm and an affordable contemporary bistro-style menu throughout the day and evening. Our menu focuses on seafood, with a strong element of vegetarian and plant based fare.Custom operates from a beautifully converted double shipping container in the East Yard of Folkestone's restored Harbour station. Through an ingredients and labour exchange initiative, collaborating with the local community, Custom is committed to delivering an uplifting and nourishing experience of creating, sharing and enjoying amazing food, which is also accessible.
