Drawing fresh local produce from a community of local Hunter Valley producers and growers, as well as from the Hope family’s own Angus cattle farms in the lush green pastures of the Upper Hunter, the menu is a culinary experience of the region best shared with a loved one, or with family and friends around the table.Within view - or easy walking distance - is the kitchen garden where the kitchen and gardening teams tend to a growing section of edibles including herbs greens and native ingredients. Just across the way is a pasture home to the Hope’s own very local Angus cattle.

In that dusty old warehouse, we saw the potential to create something really special.And so it was that Newcastle’s first modern craft brewery opened its doors in April 2015. The town’s industrial roots have played a big part in shaping the unique character of Foghorn Brewery. Built from the ground up, this art deco era warehouse with exposed roof trusses now houses a custom 1800 litre brewery.

Kieran is a great host, very knowledgeable about whiskey. The tasting experience was a lot of fun and can't wait to visit again next time im in the Hunter Valley. Highly recommend!

It has been a long time since we have such an amazing dining experience. Tower restaurant is amazing. Each element that makes for a wonderful dining experience was outstanding. We would not hesitate to recommend Tower Restaurant and look forward to the next time we can return.
