There are ninety-nine different ways to write “sushi” in the Japanese script of kanji. Each with its own unique interpretation and meaning. It was with great deliberation that our founder, Billy, chose 寿司 to best represent his personal interpretation of the word - Celebration of Fish! That’s exactly how Billy feels about the art of making sushi and the atmosphere that surrounds it - it should be a celebration! Which is why Billy Sushi is more than just a restaurant, it is an experience for anyone who allows themselves to take part. A three-ring performance of sorts - sushi bar, sake bar and dining room - brought to life by the performances of sushi chefs, bartenders and servers. And the Ring Master and your host, Billy.

Currently I have to use a cane to walk and I made it known when I booked the reservation. Upon arrival we were asked what works best, a table or booth. Since the chairs at the tables are armless we went with a booth. Now on to the dining. Our server promptly greeted us and said he will be back quickly to take drink orders and to tell us about the specials. And he was and he did. My friend had a small salad and a small risotto. I had the linguine de mare. Everything was delicious and the service was excellent, including the lady who made sure our water glasses were filled and took away used utensils and dish ware. Zelo is configured to handle just about any size group. It has wonderful food and service and is more relaxing than some of the other more expensive restaurants on Nicollet Mall.

The decision to go to Billy's Sushi was random. My wife and I were at a basketball game down the street and decided it would be awesome if we made our date a little longer by having dinner at Billy's Sushi. I think it was the best decision we made. Of course, we did a reservation and then showed up minutes after they opened. We sat at the sushi bar and ordered our food. Our bottle of sake arrived and we began the dinner date. Soon after our food arrived and it looked amazing. We figured we would order 3 rolls to start off with. They were delicious!! In the words of my wife "The best sushi" she's had in a long time. She was pleased and needless to say, she was more than pleased with the food. I thoroughly enjoyed it, it was fine sushi. Each roll was well prepared and pleasing to the taste buds and palate. At the end, after having seen how I stared at a menu item, my wife decided to buy me The French Laundry. You need to look it up and if you have appreciation for good food, you would understand this. This one piece of food made me shed tears, literally. Not because it was spicy or anything as such. It was because it was such a damn good piece of food! Yes, it really was. Again, you would have to be a person who appreciates each of the ingredients put together to compose such a symphony of flavors. It was magnificent! The ambiance was great, not too loud. It was comfortable. Staff was great, accommodating and welcoming. Billy's Sushi will be added to our favorite list of places to eat at. A massive thank you to the staff and of course Billy, see you at the next TWolves game sir.
