    Je suis allé au Spago plusieurs fois en 2020 et en 2021, alors qu’ils existaient depuis peu. Un magnifique restaurant de Chef installé au rez-de-chaussée d’un Palace des années 1900, magnifiquement restauré. J’en étais si enthousiaste que je n’ai pas arrêté d’en faire la publicité: une ambiance agréable et tranquille, élégante mais chaude, des serveuses souriantes et empathiques, fières de vous conseiller dans votre choix dans ke menu. J’y suis retourné hier soir (07/07/23), et je me suis retrouvé dans une toute autre ambiance. Une ambiance guindée et glaciale. J’ai eu droit à une serveuse au charme soviétique, incapable d’un sourire et s’abstenant de vous conseiller, car absolument pas intéressée de votre personne. Un restaurant devenu prétentieux et distant vis-à-vis de ses clients. La cuisine est toujours excellente, même si devenue beaucoup plus chère. Franchement, il y s tant d’excellents restaurants à Budapest, pourquoi aller subir une telle atmosphère et un tel traitement ? Personnellement, c’était la visite de trop: je n’y mettrai plus les pieds.
