From the moment you walk in, the ambiance is warm and inviting, with a stylish yet comfortable atmosphere that makes it perfect for a date night or a special occasion. The food is nothing short of excellent. The lobster ravioli was rich and flavorful, and the truffle fettuccine had the perfect balance of creamy and savory. You can really taste the quality in their house-made pasta. The wine selection is also impressive—plenty of great options to pair with your meal. The service was top-notch. Our server Evan Cash was knowledgeable, attentive, and made great recommendations without being intrusive. It’s clear that the staff takes pride in providing a great dining experience. Overall, Varia is a restaurant I’ll definitely be returning to. I appreciate the menu at this restaurant, including a few of my favorites, such as escargot, caviar, and Scottish salmon. Increasingly, salmon is difficult to find in Virginia restaurants because it is fashionable these days for restaurants to source their menu locally. Obviously, salmon is not a local fish, but it is delicious. I understand the appeal of the Farm to Table and locally sourced menu craze, but it is far too limiting for many customers.
