Liberty Entertainment Group's 2024 project in the iconic Union Station. Blue Bovine combines the traditional steakhouse with the traditional Japanese sushi house to fashion a distinctly modern dining experience. Combining custom elements, such as exclusively designed Canadian maple wood furniture, manufactured in Toronto with bespoke artwork, handcrafted lighting details, and a warm colour palette of deep reds, seawater blues and layers of white to reflect Toronto's four seasons. Honouring the integrity of local and natural elements, the restaurant's ethos is expressed both through the commitment to local menu ingredients on the plate and local and natural material honesty in the design.
