The short ribs were tender, and full of flavored, the shaved Brussels Sprout salad was crisp and fresh with the perfect level of cheese and dressing, the ribeye steak was fantastic, tender, and delicious. I can say it has been the best meal so far I've had in Vegas. The view at sunset is spectacular and worth getting there at 4:00pm in late November to see the sun set over the mountains. I Have been to other Gordon restaurants, however; I could feel the attention to plating, atmosphere, and I could taste what Chef Ramsey has taught his chefs. With that said, the Beef Wellington is amazing, cooked to perfection, the puff pastry on the beef crispy, with a nice medium rare steak. The lobster risotto, was smooth and delicious. Octopus with the sauces is amazing. Golden beets salad fresh and the crème is excellent. We had the house made sourdough with anchovy butter, fegatini, and nduja. All were really flavorful. The wagyu carne crudo was also delicious, the pickled chili made it pop. For our mains we tried the casarecce and the fazzoletti. The pasta was perfectly cooked. Both were hearty and had great flavor, but we agree the casarecce was the better dish. We finished with espresso and shared a butterscotch budino. It’s really rich, so one was enough!
