Eight years ago, Maximo Bistrot started as a restaurant for the thinking and execution of dishes from a wide range of techniques with the best of local ingredients; a warmful place that communicated our love for food. After a long and heartwarming road at our current location, we thought for the need of moving. Our new home, located at Alvaro Obregon 65 bis - a much wider space where gleams of natural light shine upon the surface-, is carefully assembled by Gabriela's meticulous look, and a kitchen built within Eduardo García's early memories, while living as an inmigrant in a barn in Ohio. Despite this big change, our principles initially founded remain the same: to offer food that distinguishes the best of local products.

    Rosa Negra in Mexico City offers an incredible dining experience with outstanding food and top-notch service. The staff truly go the extra mile to ensure every guest feels special, making the evening even more enjoyable. From the beautifully presented dishes to the rich flavors, every bite is a delight. The only downside is that the music can be quite loud, which might not be ideal for those looking for a quieter ambiance. However, if you’re in the mood for a lively atmosphere with exceptional cuisine, Rosa Negra is definitely worth a visit!

    Asai Kaiseki is the real deal. Commanded by the meticulous Itamae Asai, this isn’t some slapdash sushi joint slathering rolls in cream cheese and eel sauce. This is precision. This is heritage. This is one of the top three Japanese restaurants in the city, if not the best. The sushi? Impeccable. They’ve switched to koshihikari rice for their shari, and it makes all the difference, each nigiri elevated, clean, perfectly seasoned. But what truly sets Asai apart is the way it weaves Mexico into its Japanese foundation, not as a gimmick, but with finesse. Take the nopal (cacti) nigiri, for instance—a dish that embodies respect for both traditions without veering into fusion for fusion’s sake. But if you really want to understand what Asai Kaiseki is about, go for the kaiseki experience. This isn’t just a meal; it’s a journey. Course after course, unfolding like a perfectly timed symphony—seasonal, balanced, and deeply rooted in Japanese culinary philosophy. Omakase is also an option here, and it’s equally worth surrendering yourself to the chef’s expertise. This is where you come for real Japanese cuisine in Mexico City. No shortcuts, no theatrics—just craftsmanship, discipline, and a deep respect for the food.
