The name Zacatlán surged from the origins of our chef, Eduardo Rodriguez. He was born in Zacatecas, Mexico (north-central Mexico), which is defined as "the habitants of the land where grass grows". Zacatlán is the nahuatl translation for "land with an abundance of grass", and that is where our idea of Zacatlán Restaurant began. Zacatlán Restaurant desires to continue to preserve the traditions for our upcoming generations, while bringing forth new flavors. These new flavors incorporate Southwestern and Mexican influences. We are established near the Santa fe Plaza, right off of Guadalupe Street. We want to unveil a new fusion of food for everyone in Santa Fe and those who visit.

Joseph’s Culinary Pub a été conçu afin de permettre au Chef Wrede de laisser libre cours à sa créativité, unique et sans compromis, pour la cuisine traditionnelle et contemporaine, à la fois régionale et internationale. Originaire de Mexico, le chef Fernando Olea, ancien chef de l'Epazote, n'en finit pas de fasciner les convives à Santa Fe depuis 1991. Le chef Olea crée des saveurs sophistiquées mettant à l'honneur les traditions culinaires et autochtones du vieux Mexique et des ingrédients cosmopolites. Son menu volontairement restreint propose avant tout des viandes ainsi que des produits locaux frais.
Rien n'évoque plus le mystère de la cuisine mexicaine que le mole, sauce complexe comprenant des épices grillées et concassées ainsi que des graines, des noix, du chili et du chocolat. De nombreuses recettes élaborées à partir de cette sauce comportent plus de 30 ingrédients. Certaines recettes comprennent même 5 variétés de chili. Le chef Olea se réjouit de partager ses moles y compris le "nouveau mole mexicain", créé en 2009 pour commémorer le 400ème anniversaire de Santa Fe en 2009. La grande peinture murale de la salle à manger principale a été peinte et présentée au Chef Olea par Federico Leon De La Vega, célèbre artiste de Mexico.
The name “Sassella” comes from a hamlet of 60 residents known for its vineyards near where Chef Cristian Pontiggia grew up.In addition to working at two Michelin Star restaurants in Europe, Lombardy native Chef Cristian Pontiggia has received several awards from La Confrérie de la Chaîne des Rôtisseurs, an international gastronomic society. The Italian government recognizes him as a Master Chef, and he holds a culinary degree that certifies him as a Doctor of Enogastronomy.
