Le est l'un des rares chefs proposant une cuisine moderne aux influences d'Asie du Sud-Est à avoir reçu des critiques dithyrambiques. Cette passion lui a été inculquée par sa mère, dont il conserve le souvenir des délicieux plats qu'elle préparait dans son enfance.
