You could tell the restaurant was running like a well oiled machine for Valentines Day but it honestly added to the ambiance for us, as the servers were polite but not obtrusive, and didn’t try to upsell us on anything we didn’t want. Dessert plate was a little too sweet for our palates but was still enjoyable, overall experience was great. Which in some ways is hard to believe, because earlier visits were very impressive. What made last night different? A strong sense of progression through the meal, with courses building to an astounding main course of Bison tenderloin of unreal flavor and nuance. But there was brilliant complexity in every individual course. Non-alcoholic beverage pairings were exceptionally inspiring, the drink and course it accompanied responding to each other. I have never had a meal with a wider range of flavors, textures, and temperatures, including many novel sensations. Frankly, it was a revelation, fine dining as high art.
