Designated historical, 740 is one of Colorado's two oldest remaining saloons; transformed back to its 1904 roots; a traditional American dining saloon with a turn of the century ambiance featuring a magnificent room dominating bar, built in 1880 by the Brunswick Company,. The copper spit trough, once equipped with running water, still exists at the front of the bar. Louisville, notorious for its drinking, gambling, and illegal activities, evidence of the occasional misunderstanding is the .22 caliber bullet hole in the front bar.     My wife and I were delighted by the elegant bar that is reminiscent of the best saloons of San Francisco. Great food, carefully presented and served. Servers were pleased to chat and answer questions about food and details of the sculpted bar. Great deserts topped off a memorable meal on a lovely snowy night at the best restaurant in the area.

    Jason was fantastic. Explained everything well. Great sense of humor! Very good at working the table. Drinks never went empty. Good at getting to the table to ask if we ever needed anything. One of the better wait staff I have ever had in my life. Made the experience top notch. Hard to find great people that take pride in their work like this.

    Although I did mark down a little on ambience (a refurbished Chinese restaurant), it was perfectly fine and representative of the best that this area seems to offer. And the price took a hit due to this being a pre fixe menu on Valentines Day, pricer than usually but again, similar to other offerings in this area. But they had plenty of staff on a very busy holiday, service was excellent, and the food was very fresh, well made, and delicious. Highly recommend.
