Le Chop House propose le meilleur de la viande bovine britannique, dépecée et vieillie à sec sur place et cuite sur la flamme nue d'un gril à charbon. Ce restaurant est un mélange novateur d'un steakhouse classique britannique et d'un bar à cocktails. Il vous est présenté par l'équipe du Monteiths Restaurant, du Sygn Bar et du WestRoom. La traçabilité est au centre des préoccupations culinaires du Chop House et sa cuisine n'utilise que le meilleur bœuf provenant de producteurs artisanaux de toute l'Écosse. La viande est dépecée sur place et vieillie à sec pendant 90 jours afin de lui ajouter de la saveur et d'augmenter sa tendreté.
