We enjoyed a couple cocktails to start followed by the Alma Tasting Menu with Chef’s Wine Pairing. This was a truly unique experience savouring indigenous ingredients in 7 courses in thoughtful and playful ways as we explored foods throughout the country. We didn’t want it to end. Everyone was so attentive, accommodating a food allergy, carefully explaining every dish and we never felt like anything was rushed or that we were waiting for the next dish. The experience was structured in different stages, aiming to provide guests with a complete and unique experience. The environment was distinctive, with many candles burning and smoke filling the air. The food was good, though it could have been better. My husband ordered a steak and found it wasn't tender, while my dish was enjoyable but arrived at a slightly low temperature. The beverages were good. The best part was the dessert; it was an amazing combination of flavors, and we thoroughly enjoyed it. Lastly, the service was decent but could use improvement. There was a long wait between our drinks and the food. One issue we encountered was that a candle on our table had burned out. When I asked for another candle, the waiter responded that they had no more candles available. This was disappointing, especially since the other tables had candles, even some that were unoccupied. The dishes are highly creative and bold, mixing an array of flavors which combine to create a sensational experience in the palate. All dishes have a theme and are cooked with locally sourced ingredients. The place is small and cute with a bohemian vibe, located in the quiet neighborhood of Aranjuez. I had the Chef Table experience where you get a 5 course dinner with optional wine pairing. All items received are not available in the menu so every plate was a surprise with a perfect combination of flavors and textures. This goes in hand with the culinary concept of Amana which combines local ingredients with techniques from around the world giving each plate a unique flavor.
