Osteria di Russo & Russo est détenu par le père et le fils Pino et Marc Russo, et supporté par une équipe dévouée «d'honorables italiens» dont quelques-uns qui ont travaillé ensemble autrefois au Bridge Room, à Sydney's CBD. Leurs plats sont classiques et combinés avec des saveurs italiennes. Toutefois, le Chef cuisinier Jason Saxby utilise rarement des ingrédients importés et est influencé davantage par les saisons et les techniques de cuisson modernes plutôt que par les recettes traditionnelles.
