Le Columbia est le plus ancien restaurant de Floride, fondé dans l'historique quartier d'Ybor City à Tampa en 1905. Géré et exploité par la même famille depuis plus de 111 ans, il a acquis une solide réputation pour son charme d'antan ainsi que sa cuisine espagnole/cubaine et sa carte de vins primée. Les tenues décontractées sont acceptées, mais le restaurant n'autorise pas les chemises sans manches pour les hommes.
