L'Optimist and Oyster Bar du The Optimist peut simplement être décrit par « quand les Hamptons rencontrent le Sud ». Il ne cherche pas à réinventer la roue, simplement à rôtir parfaitement des poissons et crustacés, issus d'une « ferme », au feu de bois de noyer blanc de Géorgie.
