Phila, pronounced “Pee La,” broken English for Philadelphia, is a first-generation Cambodian-American chef. The first in his family to be born here, his parents and siblings came to Philadelphia as refugees in 1985 after surviving the war in Cambodia.Mawn, which means “chicken” in Khmer, the Cambodian language, represents more than one thing. To Phila, chicken was at every meal growing up, and to his parents, chicken represented peacetime. During the war and genocide of the Cambodian people, there was mostly only what was found in nature to eat, including rice and salt. If there was chicken, it meant no war. At the end of that dark time, recipes were lost, and culture was wiped out, but through survival, a new authenticity was born.

We arrived early for our reservation as we thought we could do a chocolate tour but they were already closed so we asked to see if we could be seated earlier and they did. Family environment but the drink menu was perfect for us adults. The kids had grilled chicken, mashed potatoes and carrots- it was delicious! My husband had the chocolate short ribs, they fell apart and melted in your mouth! It was perfect! I had the mushroom risotto requested grilled chicken, it was decadent! I haven’t had a good risotto in a long while and it “hit the spot”! Our server Hailey was on-top of everything, accommodating and so friendly. The main reason for our visit was for the chocolate fondue (fun-due) it was phenomenal perfect for a Valentine’s Day dinner! We will return again and hopefully soon!
