Founded by three young Yucatecans in Merida, Yucatan, Mexico. Agua de Mar was born out of the need to explore and honour our culinary roots, focusing on pre-Hispanic Mexican cuisine and its evolution. We are a research kitchen committed to the preservation of endemic ingredients, working from the origin of the field and sustainable fishing.
We deeply value local products, our producers and collaborators. We work according to the seasonality of the Yucatan Peninsula. We produce part of our ingredients in our garden and ranch, located in the outskirts of Merida, ensuring that our animals live in freedom, without stress and with a responsible diet. We also respect marine closures, promoting sustainable practices. comida es espectacular, se siente lo fresco en cada platillo. Niguno decepciona. Tanto el chef, como Luis en comedor, excelentes anfitriones. Al Sommelier lo percibí un poco falto de humildad y algo condescendiente. EST. June 2018 Founded by three young Yucatecans in Merida, Yucatan, Mexico. Agua de Mar was born out of the need to explore and honour our culinary roots, focusing on pre-Hispanic Mexican cuisine and its evolution. We are a research kitchen committed to the preservation of endemic ingredients, working from the origin of the field and sustainable fishing.
We deeply value local products, our producers and collaborators. We work according to the seasonality of the Yucatan Peninsula. We produce part of our ingredients in our garden and ranch, located in the outskirts of Merida, ensuring that our animals live in freedom, without stress and with a responsible diet. We also respect marine closures, promoting sustainable practices. In addition, our Wine Bar celebrates Mexican artisanal distillates and natural wines, including Artisanal and pet-nat options, contributing to the VINO VIVO culture.

Est. Junio 2018. Agua de Mar es el nombre del proyecto de restauración. Surgimos de la necesidad de adquirir conocimiento, estudio e investigación de nuestras raíces y orígenes en cocina profesional mexicana y su evolución, dedicada a la protección del origen del campo y la pesca somos una cocina mexicana de investigación de producto local en busca de técnicas de preservación de ingredientes endémicos de cada región. Nuestra filosofía caracterizados por el cuidado, respeto a nuestros productos locales, productores y colaboradores trabajamos con la temporalidad de la península, ofrecemos un estilo de cocina sensible, consistente y sensata con el medio ambiente, producimos nuestro propio banco de ingredientes provenientes de nuestro y rancho ubicados a las afueras de la ciudad de Mérida. Nuestros animales pastorean de ranchos con buenas prácticas como libre pastoreo, viven una vida sin estrés y se alimentan de nuestros propios insumos. Respetamos las vedas de la fauna marina. Producimos y trasformamos nuestra materia prima en productos sostenibles, de calidad limpios y justos, a través de estas comunidades y buenas prácticas se promueve la importancia de las tradiciones y se asegura la biodiversidad. Nuestra oferta de menú hace un cambio con nuevas propuestas en alimentos y bebidas cada 4 a 6 meses dando paso a la adaptación de temporalidades. Nuestro wine bar contiene brebajes, destilados artesanales mexicanos y vinos naturales entre ellos orgánicos, biodinámicas, pet nat. Nos sumamos y aliamos a la cultura del vino vivo.

La comida es espectacular, se siente lo fresco en cada platillo. Niguno decepciona. Tanto el chef, como Luis en comedor, excelentes anfitriones. Al Sommelier lo percibí un poco falto de humildad y algo condescendiente. Pero pues a lo que va uno es a comer y verdaderamente supera las expectativas. Todo llega al punto y con temperatura adecuada.

La comida excelente, las opciones de bebidas muy restringidas, no hay variedad de cerveza, solo las que promueben que son artesanales, los vinos con poca variedad y sin carta de vinos a lelegir. No es una buena experiencia si quieres comer bien y tomar una buena cerveza y tomar un vino a tu eleccion. El servicio muy bueno, el somelier muy malo y la ambientacion pudiera estar mas acogedora

Genuine hospitality, the cocktails are original and balanced. Slow food, sustainable, with local products from Yucatán , inventive cooking and invariably delicious, the plates prepared by chef Luis RUFINO and his team is guaranteed to surprise and captivate . The use of fermentation brings a tingle that will make you want more and more after every bites.

I’ve had their hibachi Seabass twice and think it is divine (but my partner found it a tad overdone). This is sophisticated cooking that focuses on local ingredients. Our party tried four different desserts and thoroughly enjoyed the variety and creativity. The restaurant’s commitment to natural wines is impressive, but I personally wish there were other wine options. I was a little disappointed that the servers were not more attentive to our needs. We felt ignored at times. But courses were brought out promptly after we ordered them.

Tienen un excelente servicio, desde que entras val te recibe con unas excelentes opciones de bebidas y el chef Luis con una visión increíble en el conocimiento de los alimentos que te sirve, sin duda si quieren probar ingredientes y comidas comunes de una manera diferente este es el lugar.

Incredible food, wines, restaurant concept and philosophy. The chef, one of the 3 owners, is incredible hospitable. We felt like home!

We went to this restaurant for a New Year's Eve dinner. The environment was moody with a lot of candlelight and swanky music playing at a perfect volume. We are not foodies, but this was as much an experience as a meal. They serve natural (not to be confused with organic) wine, which is a bit sour but pairs nicely with the meal. Food was eclectic and delicious, and portions were adequate. The service was superb.
