Come dine with Michelin Guide awarded Chef Guillaume Robin at the Fabulous Wave Hotel. Influenced by the many flavors of Central and South America, and centered around a dramatic open theater kitchen, BACÁN is elevated yet approachable, innovative, and just a little bit unexpected.

To ensure the most sophisticated experience, we politely request all guests be respectful in their choice of attire while adhering to the following guidelines. For gentlemen we consider tank tops, sleeveless shirts, ripped jeans and flip flops too casual for our restaurant. Ladies are encouraged to wear dresses and skirts, casual dress pants, or jeans (no rips) with a stylish top. All guests should refrain from wearing ball caps, team athletic wear or clothing with offensive language. Any guest denied entry due to our dress code can be accommodated immediately or in the future after adhering to our attire guidelines.

Overall, the atmosphere is pleasant. The food meets high expectations for perfection, but it is on the pricier side, which is to be expected. However, the scallop pâté with beets and imitation caviar misses the mark. Red caviar should have a satisfying pop, not a roll, and beets belong to a different flavor profile altogether. Despite this, the food remains enjoyable, and we should always appreciate the effort that goes into creating it.

The service was great. Our waitress was super courteous and attentive. My only complaint was the food was room temperature. We waited a very long time for our food and it seemed as if it was sitting for a long time before it was brought out. The prices were a bit high compared to the portion sizes. I had the Snapper, one appetizer and a glass of Porsecco and my check was $97. It was a nice experience though.

It was my anniversary with my wife and they really made it special. The food the Service was amazing to the kindness from the staff. Definitely will be visiting again. Truly made the night very special!

We decided to try Bacan for our wedding anniversary and it was definitely an experience! The food is amazing! Everything we tried was exceptional and Jay, our server made the experience even better.

We had an unforgettable dining experience at Bacán, located in the stunning Wave Hotel in Lake Nona. From the moment we arrived, the atmosphere was both inviting and sophisticated, setting the stage for an extraordinary evening. Our server, Clau, was absolutely phenomenal. Her attentiveness and knowledge of the menu enhanced the entire experience, making us feel truly special. Every dish we ordered was nothing short of magical. The Hamachi was perfectly balanced, the Pierogi and Autumn Carrots were delightful starters, and the Branzino and Truffle Chicken were cooked to perfection. Each bite was bursting with flavor, and the presentation was impeccable. To top it off, the Banana Flambé was a showstopper for dessert—decadent and beautifully executed. The drinks were equally impressive, with the Cocobolo Old Fashioned and the Spanish Garden standing out as personal favorites. Bacán is a true gem in Lake Nona, combining incredible food, exceptional service, and a chic ambiance. It’s a must-visit for anyone seeking a top-tier dining experience. We can’t wait to return!

Our server Kendall went above and beyond. When my wife asked how is the steak, she did not just explain how a steak normally is but explained the proper way to enjoy and also how to include the sides to really make the dish pop. Her time and dedication made the experience the best and what brings people back!
