There are ninety-nine different ways to write “sushi” in the Japanese script of kanji. Each with its own unique interpretation and meaning. It was with great deliberation that our founder, Billy, chose 寿司 to best represent his personal interpretation of the word - Celebration of Fish!

That’s exactly how Billy feels about the art of making sushi and the atmosphere that surrounds it - it should be a celebration! Which is why Billy Sushi is more than just a restaurant, it is an experience for anyone who allows themselves to take part.

A three-ring performance of sorts - sushi bar, sake bar and dining room - brought to life by the performances of sushi chefs, bartenders and servers. And the Ring Master and your host, Billy.

Chef and owner Enkhbileg “Billy” Tserenbat has been cooking in the Twin Cities for more than 20 years and often checks in on tables himself, so don't feel shy asking him for menu recs.     Sushi was great but I don’t think quite lived up to my expectations (had been told really good things about it). Came to celebrate a birthday and didn’t get any special birthday recognition except for a happy birthday from the host.

    Overall 10/10 dining experience. My wife and I celebrated our wedding anniversary and it was the best yet! I got the Lefty roll and my wife got the vegetarian roll. Both were the best and freshest sushi rolls we’ve ever had (and I used to live in Japan). Service was phenomenal. Our server was well versed in the menu and took the time to educate us on the different cuts of fish, the origins of REAL Japanese wasabi and the overall Billy’s Sushi story. I highly recommend your try Billy’s if you want a top tier and fun Japanese cuisine experience.

    Love everything about Billy’s. The internal deco has some Japanese vibes but also the American vibrancy. Nice combination of the the East and the west. For sushi, freshness is the most important, and of course, Billy’s nailed it. What’s the most enjoyable is to have a casual chat with the owner Billy himself.

    After two long years dating a woman that hates sushi, we finally separated, and I was able to indulge again. This experience was optimal. My mom and I had a sashimi plate, and tuna roll. The service was perfect, and the gentleman should be commended. I just recovered from the flu, and I get very thirsty, my water glass was never below halfway. Thank you to the servers, and hosts for a very nicely done service!

    We got kicked out after an hour and 15 minutes and it was my birthday. They didn’t offer anything or even care it was my birthday until my son reminded them a second time and I got free sake.

    Really delicious food. The fatty bluefin was amazing. All of the fish was tasty and melt-in-your-mouth tender. The gyoza were great and the tempura rocked, but the sushi was really the standout.

    It was our anniversary and my boyfriend’s first time at Billy’s. He loved the experience and the atmosphere of the place. Excellent sushi, very fresh. Will for sure be returning. I cannot remember our servers name but she was so welcoming and friendly!
