Borealis Bistro is a student run dining experience. By incorporating menu planning, plate presentation, food preparation, hosting, table service, time budgeting and management, students are given real-world restaurant experience. Located in the James T. Hutchison High School, operated by the UAF Community and Technical College's Culinary Arts & Hospitality Program, Borealis Bistro operates seasonally on Thursdays. Borealis Bistro has a Prixe Fixe Menu, for $15, that includes a choice of soup or salad, entree and a beverage. Appetizers and deserts are available for an additional fee.

Reservations are required and may be booked Friday thru Wednesday, with a text to follow. Borealis Bistro reservations may be made two weeks in advance.

    People need to remember that these people Working at the Bistro are students and learning new skills. They will make mistakes. Be patient with them.

    Always an adventure in eating. Glad to participate knowing it is a learning experience for students. Helpful feedback--Server Jessica is gaining confidence in her skills. She should know that it is okay to fake the confidence until she truely is confident. People do it all the time! The courses arrived at an uneven pace to our table. The result was that my main course arrived before I was done with my appetizer, soup and salad. The dumplings were cool before I ate them. Still tasty, but would have been better warm. Disappointed to have missed out on apple strudel, but that is the hazard of the later reservations. I don't have any idea how restaurants plan on how much food to have prepared so I won't second guess it. Just a comment because eating apple strudel would have reminded me of my Hungarian grandmother, who made the BEST apple strudel of my childhood.

    We waited over 20 minutes before our server even came to the table. Someone else brought us water. Suggest to the servers that even if they can't take the order in a reasonable amount of time, to AT LEAST acknowledge the table and that the order will be taken as soon as possible.

    This was the worst one yet 😢 we love going to these this was not worth our money. Food was not that good and small amount also waited 45 mins to get our lunch we understand it’s a student learning environment but being the end of the season you would think it would of improved not gotten worst. Also please get more then one check out computers.

    Ambiance was marred by table location near to kitchen door where kitchen/service staff were in and out of frequently. It was startling to have several ice sculptures (beautiful as they were) topple and break during dining. From the reaction of proximate diners, it seemed to be a safety concern. Chowder tasted a bit fishy. Carrots and potatoes of boiled dinner were flavorful and cooked to perfection. But I could have done without the broth in the bowl. Boiled dinner is not a soup, at least not in the New England I grew up in. The food is cooked in water, but served on a dry plate. More appetizing to my palate. The ice cream was creamy and hard at the same time and delicious!

    The host at the front door was friendly. The server was friendly but the service was slow (I would not recommend the 12:30 seating as things were backed up). The appetizer shrimp on roll was not very tasty as the roll seemed as if it came from an inexpensive local grocery. The soup was actually quite tasty but barely warm. The salad appeared to come out of a bag from Costco. The pot pie also tasted like it came prefab from the grocery frozen items. The fish and chips was mediocre and not hot. We enjoy the students (and their diverse age and skill sets). This was our third lunch this year and, although our first disappointment, we will return.

    Yesterday's menu choices were excellent. The deep fried halibut was the best deep fried halibut I have ever tasted. The coating was amazing and the fact that it was not greasy made it marvelous. I tip my hat to the chef who instructed the students and cooked the fish. This program, through the University of Alaska-CTC, the Bistro and the faculty-staff are a win-win for the city of Fairbanks.

    Realizing that this is a learning environment for students, the overall meal product depends on whoever selects the menu and recipes. The American southern meal was only part southern and also part Cajun. Quality-wise, servers need to learn that it’s acceptable for them to not take a dish to the table. One of us ordered the pecan pie. It was over cooked to the point that the lone pecan on the top was black with most of the rest of the top burned as well. Service was sporadic as the table next to us, seated after us, was served well before us on everything from water through dessert. My husband said the hot chicken was very good and moist as well. My blackened halibut was very good and our other dining companion said the pulled pork was also good. Kudos to the chefs on the proteins!

    Enjoy the variety of choices the menu offers. Enjoy the socializing with familiar faces in the dining room. Enjoy seeing the students gain confidence in their abilities during the semester.
