Bu'ul is the restaurant of the Chablé Maroma hotel, recommended in the 2024 MICHELIN Guide. Its cuisine is in charge of our corporate chef Jorge Vallejo, recipient of two MICHELIN stars for his Quintonil restaurant in Mexico City.

Freshness, seasonality and personality converge on the plate at Bu'ul, with contemporary cuisine influenced by the culinary traditions of Southern Mexico, complemented by a spectacular wine list. Bu’ul is the Mayan word for "bean".

The decoration and architecture of Bu'ul is sublime, with indoor seating in a spacious, inviting ambiance featuring artistically rendered local materials, and outdoor seating serenaded by the sound of the waves.

    Estuvimos hospedados en el hotel Chablé, todo excelente ahí, pero en el Bu’ul pedimos el menú de degustación, delicioso todo, menos el pato que a nuestro gusto le faltaba sellarlo, y al pedir que no lo sellaran, se notó el disgusto y tardaron 40 min en traérnoslo, al final hicimos un menú de 3 horas, eso no nos gustó, y que el mesero no fue nada amigable.. el chef Carlos es excelente sabe lo que hace y estuvo muy presente en atendernos a todo momento.Mil Gracias

    I want to start by saying, I'm somebody who spends a lot of time and money on quality dining. I have no problem shelling out serious cash when dining. However, I don't like feeling fleeced by a dining experience and that's how I felt leaving Bu'ul. The food while beautifully presented, was somewhat bland and forgettable, with price tags that were quite memorable in all the wrong ways. The wine list was extensive, but astronomically priced. I understand wine in Mexico isn't a great value - but charging nearly US$120 for an $8 Sauvignon Blanc from NZ is a crime in any country. Meanwhile, I kept feeling like the wait staff was trying to upsell. We left Bu'ul feeling underwhelmed and very annoyed with ourselves for choosing this restaurant. (The only saving grace are the cocktails and views from the bar on the second floor.)
