Absolutely a must-visit! From start to finish, this was an unforgettable experience. We were lucky enough to grab seats at the bar, where we had the pleasure of chatting with bartender JC. Not only did his cocktails keep getting better and better, but his passion and expertise truly shone through. JC is the epitome of a professional bartender—knowledgeable, friendly, and always engaged with his guests. Every guest had questions about the drinks he was crafting, and JC took the time to explain each creation with enthusiasm, sharing the unique ingredients, techniques, and stories behind them. His genuine interest in ensuring everyone had a memorable experience made the night even more special. If you're lucky enough to have JC as your bartender, you're in for a treat!

We loved the whole experience. Start to finish was great. George the bartender was so great and made amazing cocktails. The vibe is super cool. We went 2 nights in a row!

Service was terrible and you could have gotten better drinks cheaper. $22 a drink is overpriced and not worth the price.

We were met at the front desk and offered two drinks to bring with us. We were escorted to a door which opened to a dark & sexy room with a bar and cozy booths. George was our mixologist and did he ever wow us! We gave George an idea of what flavors we like and away he went! Our taste buds were blown away! My finance only drinks beer….He had two of George’s drinks and loved them! Awesome atmosphere with history thrown into the mix. Parking is valet and validated by Canary. Super cool experience! Can’t wait to go back when we return in March! George thank you for such a special evening! Tabatha & Jack

We had a great start to our night at Canary. The concept was a lot of fun, and our bartender was clearly knowledgeable. Talking through our typical drink preferences with him, and then seeing the finished cocktails he created to suit our tastes, was a unique and fun experience. We look forward to coming back soon.

Just celebrated my 30th birthday. CJ remembered me from a month ago and made awesome drinks my my group of friends. Highly recommend this place for a unique and tailored experience!

We waited 15 minutes past our reservation to be seated. They haven't quite worked out communications with front desk. Once we were greeted it was with some welcome drinks and we were taken away behind several doors. A fun concept to have something interesting to do inside a hotel property. Had a great time enjoying our well made cocktails.

I will be back next week and exited to experience saga in. Amazing experience. Shaun the GM is the best. Such a great tour and history of the hotel. Drinks are amazing. It’s small but nice to go in for a few drinks before dinner.
